2) Maple Apple Topping
Core and slice one small apple of any variety. Place the slices in a small saucepan along with ¼ cup of maple syrup and 1 tsp. ground cinnamon. Bring to a simmer and cook, stirring, until the syrup is hot and the apple is tender. Serve over oatmeal or whole grain waffles.
3) Sweet Peanut Butter Apple Slices
Core one medium-sized apple. Spread each slice with a thin layer of peanut butter and stick three to four golden raisins on top. This is a great kids’ snack and can be made with any kind of nut or seed butter.
4) Apple Date Oatmeal
Core and chop one small apple and place it in a small saucepan along with 1 ½ cups water, ½ cup unsweetened almond milk, two chopped pitted dates and a cinnamon stick. Bring to a boil, then reduce the heat and simmer for five minutes. Add 1 cup of old-fashioned rolled oats, bring to a simmer and cook, stirring occasionally, for ten more minutes. Remove the cinnamon stick before serving.
5) Quick Homemade Applesauce
Peel, core and chop several apples and place them in a blender or food processor. Process until mostly smooth. Then, season as desired for a sugar-free, additive-free alternative to commercial applesauce. The puree can also be used in place of oil in recipes for baked goods such as muffins.
